By now you know I’m not a calorie counter. I’m a nutrient counter, but I just have to give you the facts here: zucchini has 20 calories per cup vs 280 in spaghetti. Not to mention that Zucchini noodles have way more nutrients than your average whole wheat pasta. So just get yourself a julienne peeler and give it a try. Seriously, if my pasta-loving husband is a convert so will you be.
- 1-2 Medium zucchini
- 1 tbsp Olive oil
- 1 clove Garlic minced
- Salt and pepper
- Cut the ends off the zucchini, then with julienne peeler, peel zucchini into long, thin ribbons of zucchini. Separate with your hands.
- Heat a skillet with the olive oil, then gently fry the zucchini with the garlic until slightly tender and serve with your favourite sauce.
