Wheat Free, To-Die-For Blueberry Muffins

These are addictive, fast and easy. I know this is sounding too good. And yes we are talking muffins here! Seriously, when blueberries are in season these tasty treats ooze with yumminess. High in fiber, healthy fat and antioxidants, these wheat and refined sugar free muffin are the perfect snack or on-the-go breakfast. Freeze up!

Ingredients
  

  • 1 1/2 cups Almond meal
  • 1 cups Rolled oats
  • 1 tbsp Hemp seeds
  • 1 tbsp Coconut flour
  • 1/4 tsp Salt
  • 1/2 tsp Baking Soda
  • 1 tsp Cinnamon
  • 1 tsp Vanilla extract
  • 2 tbsp Honey
  • 1/4 cups + 1 tsp Coconut oil
  • 2 Eggs
  • 1 cups Fresh blueberries

Instructions
 

  • Preheat oven to 350.
  •  Line a 12 count muffin tin.
  • In a mixing bowl dry ingredients (almond flour, oats, coconut flour, salt, cinnamon and baking soda) and stir to combine.
  • Pour in coconut oil, eggs, honey and vanilla; mix well. Fold in blueberries.
  • Distribute into muffin tin. Bake for 20-25 minutes. Allow to cool and enjoy
