Thai Salad Dressing

This is a light and refreshing dressing great on any salad—simple green or hearty kale. Perfect side dish to other warm winter curries, lentils and soups already posted here. The spices and herbs in the dressing make for a wonderful detoxification and cleanse aid. Ginger, mint, coriander, chilli and garlic will aid the elimination of toxins and may increase the metabolism. The mix of flavours make any and all veggies come alive.

  • 2 cloves Garlic
  • 2 Chilis (any type)
  • 2 inches Ginger
  • 2 tbsp Tamari
  • 1-2 Juice of lemons
  • 2 tsp Lemon zest
  • 2 tbsp Coconut sugar
  • Herb stems—like cilantro, basil, mint —your fave mix (keep leaves for salad)
  1. Chop stems.

  2. Put all ingredients in a glass jar and shake well. Lasts for 1 week in fridge.
