OK, so if you like key lime pie, this crazy healthy dessert will floor you. Loaded in Vitamin C and healthy fats, this dairy free, refined sugar free sweet treat is a crazy palette cleanser and a delicious end to a nourished meal. I should also add, it is super easy to make—like Blend, Freeze, cut!
No one will believe it is cashews.
- 1 cup organic lime juice
- ½ cup unrefined coconut oil
- 1/4 cup raw organic honey
- 4 cups raw organic cashews
- ½ -1 cup water
- 1 cup toasted coconut shreds
Combine all ingredients in a blender except for the water, and blend on high. Add the water last and as needed to keep the blending going and make the mixture smooth.
Freeze at least 4 hours, or overnight. Cut into bars and served with raspberries and toasted coconut shreds.
Store in the freezer and keep for a few weeks.
