Raw Key Lime Pie Bars
OK, so if you like key lime pie, this crazy healthy dessert will floor you. Loaded in Vitamin C and healthy fats, this dairy free, refined sugar free sweet treat is a crazy palette cleanser and a delicious end to a nourished meal. I should also add, it is super easy to make—like Blend, Freeze, cut!No one will believe it is cashews.
Ingredients
- 1 cups Organic lime juice
- 1/2 cups Unrefined coconut oil
- 1/4 cups Raw organic honey
- 4 cups Raw organic cashews
- 1/2 – 1 cups Water
- Raspberries
- 1 cups Toasted coconut shreds
Instructions
- Combine all ingredients in a blender except for the water, and blend on high. Add the water last and as needed to keep the blending going and make the mixture smooth.
- Freeze at least 4 hours, or overnight. Cut into bars and served with raspberries and toasted coconut shreds.
- Store in the freezer and keep for a few weeks.
