- 1 cup rolled oats or steel cut oats.
- 1 cup mashed pumpkin or 1 can of pumpkin puree
- 2 teaspoons pumpkin pie spice
- 1 tablespoon vanilla
- 1 cup coconut milk (or 1 can) + 2 cups water
- 1 teaspoon cinnamon
- 1/4 cup honey or maple syrup
Mix all ingredients in saucepan except oats, bring to a boil. Add oats and cook like normal.
