Love this take on the traditional. OMG, so good. And so good for you. Heart healthy oats bursting with beta carotene and blood loving spices.
-1 cup rolled oats or steel cut oats.
-1 cup mashed pumpkin or 1 can of pumpkin puree
-1 cup coconut milk (or 1 can) + 2 cups water
-1 tablespoon vanilla
-2 teaspoons pumpkin pie spice
-1 teaspoon cinnamon
-1/4 cup honey or maple syrup
Mix all ingredients in saucepan and cook oats like normal.
