- 1 Cup Pumpkin Puree
- 1 Cup Coconut milk
- 1/3 cup Maple Syrup
- 2 TSP Pumpkin Pie Spice
- 1/2 TSP Sea Salt
- 1 TSP Vanilla
- 1/2 TSP Lucuma, found in Whole foods, Choices, Health foods stores. It is a healthy superfood sweetener made from Peruvian fruit.
- 1/ 2 cup pumpkin seeds, pomegrante seeds, optional for garnish
3 hours before serving, freeze the pumpkin puree in small chunks (on wax or parchment paper) and freeze coconut milk in ice tray. When ready to serve, take out and thaw for 5 minutes. Blend together in high speed blender or food processor all ingredients until smooth. Serve dusted with pumpkin seeds and pomegrante seeds.
