- 4-5 peppers—all colours, slice in chunks
- 2-3 red onions—Cubed
- 1, 2 bunches asparagus—ends removed
- 1-2 Zucchini—sliced Vertical
- Any of your favs—chunked up
In mixing bowl, toss with Olive Oil, salt and pepper.
Throw in grilling basket or roasting sheet and place on grill for 25-30 minutes.
Giving pan a little shake now and then to even up charring.
Serve as, sprinkle a bit of parsley of crumbled goat cheese on top—optional.
Serve as side or toss with quinoa. Delish summer dinner.
